this is a sort of mexican twist on chicken you need
the chicken breasts(of course) 1lb
1/2 tsp garlic powder
1/2 tsp. onion powder
drizzle olive oil or reg veg ok too
salt and pepper - To taste
1 16 oz jar of salsa or 15 oz can of diced tomatoes with chilis
a bag of a good mexican blend shredded cheese or cheddar
in a saute pan add oil then chicken breasts (seasoned with garlic and onion powder salt and pepper). sear on both sides try to lightly brown. when browned add the jar of salsa and cover for 20 minuted to incorperate flavors and to finish cooking the chicken. when plating add a bit of the sauce created allong with a sprinkle of the cheese. If you use low fat cheese and olive oil its a pretty healthy dish.
Bacon Feta Chicken Breasts
4 servings
preconditions: Preheat oven to 375 degrees.
Ingredients:
4 boneless chicken breasts
8 slices uncooked bacon
1 cup crumbled Feta cheese
Preparation Method:

Place chicken breasts in an oven-safe baking dish, any size.

Divide the crumbled feta cheese between the 4 chicken breasts; top each one with the cheese.

Wrap 2 slices of bacon around each chicken breast with cheese.

Bake in a 375 degree oven for 45 minutes, or until the juices run clear.
Carbs:
Less than one carb per serving.
I rub one breast with taco seasoning mix. Bake in a foil pack (keeps it moist). Then I add the finely diced hot chicken to a salad of lettuce, tomatoes, red onions, cheddar cheese and olives. I top with a mixture of sour cream, salsa and fresh cilantro.
Another way I do this is rub a flattened chicken breast with some canola mayo. Then I press in some parm cheese. Let it sit for about 5 minutes. Then sautee in a little olive oil until golden brown. Generally it's about 5 minutes per side. Serve with broccoli florets you have sauteed in equal parts olive oil and butter with salt and pepper. Top with parm cheese.
Get some all natural, no sugar peanut butter. Mix together with about 2 tbsp. of honey (I know carbs, but you can use splenda) add about 1 tbsp each salt, chili powder, and about 1/2 tsp. hot chili flakes, and a clove of garlic . Blend in a food processor or blender with canola oil until it get's to a dip consistency. Simmer slightly until warm. Use to dip chicken into.
Blue Cheese and Swiss Chicken
4 servings
Ingredients:
4 Boneless, Skinless Chicken Breasts
4-Slices of Swiss Cheese
4-Tablespoons of BlueCheese
Seasoning to taste
Preparation Method:

Season and Bake Chicken Breast until done

Remove from oven

Top with 1 tablespoon bluecheese and cover with a slice of swiss cheese

return to oven until swiss cheese is melted
