Chocolate Chip Cookie Bars:

1 (18.25 ounce) package yellow cake mix

2 eggs

1/4 cup packed brown sugar

1/4 cup butter or margarine, melted

1/4 cup water

2 cups semisweet chocolate chips

Preheat oven to 375 degrees and grease a 13x9 inch cake pan. Mix all the ingredients except the chocolate chips and beat with a mixer for 2 minutes or until smooth. Stir in the chocolate chips. Spread into the cake pan and bake for 20-25 minutes, until lightly browned on top. Remove from heat and cool in the pan for 10 minutes. Cut into bars and remove from pan.

A favourite recipe in my house. The bars have a delicious, cake-like quality.

-- Yes, you can use white cake mix instead =)

Good for you, Courtney! Baking is becoming a lost art; I'm glad to hear young people like you are interested in it.

How about a fruit crisp?

Apple Crisp

5 - 6 medium sized apples, peeled, cored, and sliced

1 tsp lemon juice

1/2 - 1 cup sugar (depends on how sweet the apples are)

1/2 tsp cinnamon

1/4 tsp nutmeg

1 cup flour

1 cup brown sugar, packed

1 tsp cinnamon

1/2 cup butter, softened

pinch of salt

Preheat oven to 375F.

In a large bowl, combine the sliced apples, lemon juice, sugar, and spices. Stir well, and let the apples get a little juicy. In the meantime, make the streudel topping: Mix the flour, brown sugar, cinnamon and salt together well. Mix in the butter until you have large crumbs but not a paste. It will look like lumpy sand.

Place the apple mixture in a 9x9" baking pan. Sprinkle the streudel topping over the apples, making sure all the apples are covered. Place in the oven and bake about 35 - 45 minutes or until apples are tender and their juice has thickened, and the streudel is golden brown.

This is a fast, easy little cake that my grandmother used to make all the time. It's a good way to use up extra apples, pears or even peaches...

GRAM'S APPLE CAKE

1/2 c. sugar

1 egg, slightly beaten

1 TB baking powder

1 TB butter, softened

1/2 c. sour cream

1 cup flour

extra sugar, some cinnamon, and butter

2-3 sliced, peeled apples

...Beat first 6 ingredients well. Pour into greased square pan. Top with peeled, sliced apples and sprinkle with some sugar & cinnamon. Dot with butter. Bake at 350 for 30-50 min......

I have several easy recipes on my website. One is for a double chocolate brownie, no bake chocolate cheesecake or a chocolate pan cake. Several others are equally easy. They all have chocolate as an ingredient, so if you like chocolate:

I love making trifle. There are many recipies you can use but this is the one I go with:

Layer the following in a deep bowl or a trifle dish:

vanilla pudding

caramel

nilla wafer crumbs

real whipped cream

Other versions are:

brownie pieces

ganache or chocolate syrup

chocolate mousse or chocolate pudding

real whipped cream

white cake peices

sliced strawberries

toasted slivered almonds

real whipped cream

Super easy step by step cupcakes! Enjoy :)

It requires cooking of 20 minutes for each layer (two layers, you cook one then take it out and add the second one on. Im not sure if the sour cream layer or cream cheese layer is first?. My dad lost his recipe from 40 years agao, he is 80 and I want to make it for xmas for him. It was very basic, I think sugar, eggs, sour cream and two ready made pie crusts.

Sounds kind of like my favorite cheese cake recipe. James Beard collected it as part of the "Everybody Loves Cheesecake" section of the Woman's Day Encyclopedia of Cookery (1966).

Jay's Famous Cheese Pie

1 1/2 cups fine graham-cracker crumbs

1/4 cup melted butter

3 packages (3 ounces each) cream cheese

1/2 cup plus 5 tablespoons sugar

2 eggs, beaten

1 teaspoon vanilla extract

2 cups sour cream

1/8 teaspoon cinnamon

Have cheese and eggs at room temperature. Mix crumbs and butter well with hands. Press onto bottom and ides of 9-inch pie pan. Bake in preheated moderate oven (350 F) for 5 minutes. Cream cheese well. Gradually beat in 1/2 cup sugar. Add eggs and 1/2 teaspoon vanilla; beat well. Pour into prepared pan. Bake in slow oven (325 F) for 20 minutes, or until firm. Mix sour cream, 1/2 teaspoon vanilla, 5 tablespoons of sugar, and the cinnamon. Spread on top of pie. Return to oven and bake for 5 minutes. Cool, then chill.

What makes Thai food so spicy?

เรื่องโดย Apichai Chomsing | 4/11/2552 08:03:00 PM | 0 ความคิดเห็น »

I've frequented a thai restaurant now for a few years, and they serve the best pad thai around. I would like to know if anyone has a recipe for very spicy Pad Thai sauce.

Thai Pepper

http://en.wikipedia.org/wiki/Thai_pepper

Phad Thai isn't meant to be spicy at the cooking stage. It's quite a sweet sauce although you can sprinkle chili powder on it at the table to taste.

(Obviously) what makes the Spicy Thai food Spicy are chillies (in various forms). The very small ones (around a centimeter) seem to be head-blowing-off hot!

I had Pad Thai for the first time ever in a trip to Thailand in September 2007. I looked everywhere for the PERFECT recipe and although i can never get it to taste as good as they make it over there, i have found one recipe that is pretty darn close!!

http://thaifood.about.com/od/oodlesofnoodles/ss/chickenpadthai_3.htm

it really is the result of a spicy thai pepper

at thai restaurants you can ask for anything to made more or less spicy

i am including a link to a wiki article about the specific peppers commonly used in thai cooking.

Mostly, Thai chilli powder makes pad thai and other kinds of Thai food spicy.

Pad thai sauce recipe, add more chilli powder if you like more spicy :

http://chezpim.typepad.com/blogs/2007/01/pad_thai_for_be.html

Certain sort of herb, plants and meat give these aroma's that the human tongue seem it to be the taste of spicy. The most common things may be black pepper, coriander, soy, mint and Chilli peppers.

I dont have a recipe but you can find a great one on vegweb.com~ the Thai chili is what makes it sooo freakin hot, they are the small green chiles or you can crush your own red chiles. yumm! good luck

I don't have a recipe, but I know some grocery stores sell pad thai sauce in bottled form.

you could also ask the restaurant although they may not give it to you

Chili peppers.

curry...

I was thinking of making a food for German class cuz we're having culture day and are allowed to bring in a German food.

If you have any links or recipes plz if possible make sure the measurements are metric, cuz most German recipes aren't metric I believe

shnitzel

cabbage salad

pork hock

wursts and sauerkraut

http://allrecipes.com/Recipes/World-Cuisine/Europe/Germany/Top.aspx

Black Forest Cherry Cake, German Crumble Cake using Damson Plums, Sweet dessert dumplings. Of course I have a recipe for the classic favorite, Wiener Schnitzel and Jagger Schnitzel. Served with Spatula, or my pan fried potatoes (Basketful) they are both delicious.

Did you know that Sauerkraut is really healthy? Add a dash of champagne to my tasty recipe for a sparkling change.

There are also some great German cookie recipes. In Germany they are called Basketful so go check out the recipes and make sure that you have all the baking ingredients to hand. I have also included some edible Christmas decorations which are cookies to hang on the tree. Obviously you can bake these cookies at any time of year.

This website is the English-language version of Marions Kochbuch (Marion's Cookbook), an excellent website for German recipes that aren't too difficult.

The English-language version has measurements in both Metric and Imperial ('Standard') measures:

http://www.marions-kochbuch.com/

Sorry, but the last time I tried to give German-American recipes, some old Nazi bee-yoch cracked down on me, saying how German's would NEVER cook that!

She was from GERMANY...so she knew it all.

I'm sorry I can't help you with this.

This recipe was brought over to the US by my great-great-grandmother in the mid 1800s - sorry but I don't have it in metric. It has also been modified a bit over the years.

Dresdner Stollen

To make two 13-inch loaves

½-cup seedless raisins

½-cup dried currants

1-cup mixed candied citrus peel

¼- cup candied angelica, cut into ¼-inch dice

½-cup candied cherries, cut in half

½-cup rum

¼-cup lukewarm water (110º to 115º)

2-packages or cakes of dry or compressed yeast

¾-cup plus a pinch of sugar

5 ½-cups plus 2 tablespoons all purpose flour

1-cup milk

½ -teaspoon salt

½ -teaspoon almond extract

½-teaspoon finely grated fresh lemon peel

2 eggs at room temperature

¾ -cup unsalted butter cut into ¼-inch bits and softened

8-tablespoons melted unsalted butter

1-cup blanched slivered almonds

¼ cup confectioner’s sugar, sifted

Combine the raisins, currants, candied citrus peel, angelica and cherries in a bowl. Pour rum over them, tossing the fruit about to coat the pieces evenly. Soak at least 1 hour.

.

Pour the lukewarm water into a small bowl and sprinkle it with the years and a pinch of sugar. Let the mixture stand for 2 or 3 minutes, then stir to dissolve the yeast completely. Set the bowl in a warm, draft free place (such as a turned off oven) for about 5 minutes or until the mixture almost doubles in volume.

Meanwhile drain the fruit, reserving the rum, and carefully pat the pieces completely dry with paper towels. Place the fruit in a bowl, sprinkle it with 2 tablespoons of flour, and turn it about with a spoon until the flour is completely absorbed. Set aside.

In a heavy 1 ½ - to 2- quart saucepan, combine the milk, ½-cup of the sugar and the salt. Heat to lukewarm (110º to 115º), stirring constantly until the sugar dissolves. Off the heat, stir in the reserved rum, the almond extract and the fresh lemon peel, and finally the yeast mixture.

Place the 5 cups of flour in a large bowl and with a fork stir in the yeast mixture, a cup at a time. Beat the eggs until frothy and stir them into the dough then beat in the bits of softened butter. Gather the dough into a ball and place it on a board sprinkled with the remaining ½-cup of flour. Knead the dough, by pushing it down with the heels of your hands, pressing it forward and folding it back on itself. Continue the kneading for about 15 minutes, or until all the flour is incorporated and the dough is smooth and elastic. Flour your hands lightly from time to time. Now press the fruit and almonds into the dough, 1/3 cup or so at a time, but do not knead or handle it too much or the dough will discolor. Coat a deep bowl with 1 teaspoon of melted butter and drop in the dough. Brush the top of the dough with another 2 teaspoons of melted butter, drape a towel over the bowl and set it in a warm place for 2 hours, or until the dough doubles in bulk.

Punch the dough down and divide it into two equal pieces. Let them rest for 10 minutes, then roll the pieces out into strips about 12 inches long, 8 inches wide and ½-inch thick. Brush each strip with 2 tablespoons of the remaining butter and sprinkle each with 2 tablespoons of the remaining sugar. Fold each strip lengthwise in the following fashion: bring one long end over the center of the strip and press the edge down lightly. Then fold the other long side across it, overlapping the seam down the center by about 1 inch. Press the edge gently to keep it in place. With lightly floured hands, taper the ends of the loaf slightly and pat the sides gently together to mound it in the center. The finished loaf should be about 3 ½ to 4 inches wide and 13 inches long.

With a pastry brush, and 1 tablespoon of melted butter, coat the bottom of an 11 by 17 inch jellyroll pan. Place the loaves on the pan and brush them with the remaining 2 tablespoons of melted butter. Set the loaves aside in a warm draft free place for about 1 hour or until doubled in bulk. Preheat the oven to 375º. Then bake the bread in the middle of the oven for 45 minutes or until golden brown and crusty. Transfer the loaves to wire racks to cool completely. Just before serving, sprinkle the loaves with the sifted confectioner’s sugar.

I frost mine with thin butter cream frosting.

I'm looking for a good chocolate dessert recipe?

เรื่องโดย Apichai Chomsing | 4/10/2552 11:04:00 PM | 0 ความคิดเห็น »

I'm making a special dinner for my fiance before he leaves... I'm looking for a really good dessert recipe with chocolate. It doesn't have to be for two...if there are extras, there are plenty who would love to scarf it down:)

Gold-Painted Chocolate Truffles

4 1/2 ounces semisweet chocolate, chopped

2 1/2 ounces unsalted butter, softened

1 egg yolk

4 ounces sifted confectioners' sugar

3 ounces heavy cream

1 tablespoon coffee-flavored liqueur

4 ounces semisweet chocolate, chopped

Powdered gold leaf

Melt 4 1/2 ounces of the semisweet chocolate in a double boiler until just fluid. Using a whisk, incorporate softened butter, then egg yolk, sifted confectioners' sugar and cream into the melted chocolate. Whisk until smooth.

Pour chocolate mixture in heart molds or any other molds (an egg poacher works well as a mold), and refrigerate until set, about 3 hours.

Melt remaining 4 ounces of chocolate in a double boiler until just fluid.

Unmold chocolate truffles and dip them in the melted chocolate, shake off excess chocolate and set on parchment paper. Trim excess chocolate.

In a small bowl, combine liqueur and gold dust to achieve a paint-like consistency. Using brushes, decorate hearts with gold "paint" - perhaps a fleur de lis or two, an "I love you," etc. Be creative!

Chocolate Almond Mousse

3/4 cup milk

4 large eggs

1/4 cup granulated sugar

1 (6-ounce) package semisweet chocolate pieces

1 teaspoon vanilla extract

1/2 teaspoon almond extract

2 to 3 tablespoons slivered almonds

In medium saucepan, stir together milk, eggs and sugar until thoroughly blended. Cook over low heat, stirring constantly, until mixture is thick enough to coat a metal spoon with a thin film and reaches at least 160°F. Remove from heat.

Stir in chocolate and flavorings until chocolate is melted.

Spoon into 8 pot de creme cups or 1/4 cup dessert dishes. Sprinkle with almonds. Refrigerate several hours or overnight.

Makes 8 servings.

Microwave Method: In small bowl, stir together eggs and sugar until thoroughly blended. In 1 cup liquid measure, cook milk on full power until bubbles form at edges, about 2 1/2 minutes. Stir into egg mixture. Cook on 50% power, stirring every minute, until mixture is thick enough to coat a metal spoon with a thin film and reaches at least 160°F, about 3 to 4 minutes. Continue as above.

Write a statement comparing a chemical equation to a cooking recipe?

เรื่องโดย Apichai Chomsing | 4/10/2552 09:03:00 PM | 0 ความคิดเห็น »

i know that the answer is ratio and proportion, but i don't know what that means, can you please expand on what it means that an equation and a recipe have ratio and proportion in common.

to me ur answer goes like this:

for 1 molecule of water u require 2 hydrogen and 1oxygen

likewise if u prepare a cup of tea u need to put 1/2 cup water,1/2cup milk,1spoon of sugar and tea leaves if u increase or decrease the ratio the taste might not be appropriate.

i think this wud help u out 4 ur right answer.

Party food recipes using rice?

เรื่องโดย Apichai Chomsing | 4/10/2552 08:03:00 PM | 0 ความคิดเห็น »

What's your favorite appetizer or dessert recipe that includes rice? I love Thai coconut mango sticky rice, but I want to try something different. I wanna make it for Halloween using forbidden black rice. It has to be something that can travel, preferably something that doesn't require utensils.

porcupine balls. My girlfriend made them five years ago and I still remember them. I remember it had spinach, rice, parmasean cheese, etc and then they were baked. SO GOOD!!!!!

Cucumber and avocado sushi! These rolls are easy to make and you can add either fake crab or smoked salmon. Serve with teriyaki or soy sauce and wasabi!

Cucumber and Avocado Rolls

Ingredients:

1 1/4 cups water

1 cup uncooked glutinous white rice (sushi rice)

3 tablespoons rice vinegar

1 pinch salt

4 sheets nori (dry seaweed)

1/2 cucumber, sliced into thin strips

1 avocado - peeled, pitted and sliced

Directions:

Combine the water and rice in a saucepan and bring to a boil. Cover, reduce heat to low and simmer for 20 minutes, or until rice is tender and water has been absorbed. Remove from the heat and stir in the vinegar and a pinch of salt. Set aside to cool.

Cover a bamboo sushi mat with plastic wrap to keep the rice from sticking. Place a sheet of seaweed over the plastic. Use your hands to spread the rice evenly onto the sheet, leaving about 1/2 inch of seaweed empty at the bottom. Arrange strips of cucumber and avocado across the center of the rice. Lift the mat and roll over the vegetables once and press down. Unroll, then roll again towards the exposed end of the seaweed sheet to make a long roll. You may moisten with a little water to help seal. Set aside and continue with remaining nori sheets, rice and fillings.

Use a sharp wet knife to slice the rolls into 5 or 6 slices. Serve cut side up with your favorite sushi condiments.

I'd do arancini. Make risotto and chill it. Form into balls. Poke a cube of cheese into the middle of it. Dip in egg wash, roll in seasoned breadcrumbs and fry (or bake, but frying makes them turn out better).

Chicken Enchiladas

I've never written this down before but here goes:

1 lb chicken, white or dark or both

cut into strips and saute in 4 minced garlic cloves and olive oil

season with salt and pepper

while chicken is cooking, mix together:

8 oz. shredded Monterrey jack

8 oz. cream cheese

1/2 c. onion, chopped fine

1/2 c. fresh cilantro, minced

1/4 c. jalapenos chopped

1/4 c. black olives, sliced

salt & pepper

add chicken to mixture when cooled

prep a 9x13 pan with non-stick spray

2 to 3 cans enchilada sauce

1 doz. Small flour tortillas

Pour 1 can enchilada sauce into flat pan; use 2 if needed.

Dip both sides of flour tortillas in enchilada sauce, then fill with a few tablespoons of chicken filling. Roll firmly and place in baking pan, seam side down. (This part is messy but worth it.) Repeat till pan is full. Pour 1 can of enchilada sauce over all. Top with grated cheddar cheese and sliced jalapenos.

Bake 45 min. @ 350 degrees

Freezes well.

This is one of the best.. trust me..

Recipe for Spanish Paella (4-6 people)

Traditional and easy Paella recipe. There are many Spanish rice dishes. This is the most famous of them.

Ingredients (4-6 people):

600 grams rice (short grain)

Half a chicken in pieces

2 artichokes

2 medium-sized red peppers

2 mature tomatoes

Black pepper

Garlic

Parsley

A strand of saffron

Olive oil (one glass, about 1/4 litre)

1/2 lemon

A sprig eacho of rosemary and thyme

Salt

Steps:

1: Fry the chicken in some olive oil. Put the browned chicken pieces into a pan with 8 glasses of water, and bring to the boil. Leave simmering for half an hour.

2. Cut the artichokes and red pepper and fry them.

3: Fry the tomato and garlic in olive oil in the large paellera (special paella pan), then add the rice, stir for a minute and then add the chicken, chicken stock (there should be 6 glasses), artichokes, red peppers, the juice of half a lemon, black pepper, parsley, thyme, rosemary, the saffrón strands (grind them first. If you haven't got a grinder, use Colorante which you'll find in the spice and herbs racks in supermarkets) and salt.

4: Once all the ingredients are in the paella pan, turn the heat up to maximum and boil for about 10 minutes. Then lower the heat and leave to simmer for another 10 minutes. After 20 minutes, the liquid should have evaporated. Turn off the heat, and leave to stand for five minutes. If possible cover while it is standing (many Spaniards use paper to cover the pan).

Use quality ingredients:

Olive oil: Ciao recommends Aceite Carbonell. This page may also help you to decide: Aceitedeoliva.com.

Rice: Our favourite brand is SOS. Another excellent rice available in Spain is Arroz de Calasparra (if you get hold of a packet, the paella will need a little more cooking time). Don't forget to use short-grained rice - the kind used to make rice pudding.

Saffron: Azafrán de Carmencita.

Here's a good spice mix for any meat or bean dish. You can use it just like a packet of purchased taco seasoning.

Taco Seasoning

1 tbsp chili powder (I use Gebhardts)

1 tsp garlic powder

1 tsp ground oregano

1 tsp paprika

2 tsp cumin powder

2 tsp onion powder

I use it in this recipe, too.

Mexican Casserole

1 lb ground beef

1 packet taco seasoning

1 10 oz can tomatoes with green chiles (Ro-tel)

1 4 oz can chopped green chiles

2 cups quick cooking rice (Minute Rice), uncooked

water, salt, pepper, onion powder, garlic powder

8 oz cheddar cheese, shredded

chopped onions for garnish

Strain the Ro-tel tomatoes and extra chiles into a 4-cup glass measure. Add enough water to make 2 cups of liquid. Brown the ground beef, seasoning to taste with salt, pepper, onion powder and garlic powder. Drain beef and place in a shallow, microwavable dish. Add the taco seasoning, strained tomatoes, chiles and rice to the beef, mixing well. Heat the reserved liquid to boiling. Pour the boiling liquid over the meat mixture. Cover with plastic wrap and microwave on high for 8 minutes. Garnish with shredded cheese and onions. Serve with refried beans.

I will send you some, my mother in law is mexican and makes some good stuff...

I only know a few and they are very easy to fix;

1. Enchiladas

2. Tacos

Enchiladas:

serves 2 people

Ingredients:

-6 corn tortillas

-2 cups corn oil (or your preference)

-1 can of enchilada sauce (if you prefer chili pods let me know)

-2 cups of grated Muenster cheese (or monterrey jack, we use cojack)

-2cups ground beef

-Seasoning salt/garlic powder/onion powder/lemon juice

Instructions:

-Heat a skillet over medium heat for about 5 minutes.

-Open ground beef package and break up the meat while putting it in preheated skillet (80/20 works best).

-Sprinkle Seasoning salt (lawry's or McCormick's Spicy Season-All), garlic powder, onion powder, and about 1/2 cup lemon juice (can be fresh or from bottle)

-Brown meat while mashing it to make finer pieces

-When meat is ready, tip pan and put meat to the top of skillet to let fat drain.

-In another pan heat up the 2 cups of oil over medium heat.

-In another pan heat up the enchilada sauce over

medium heat

-Bring the heat down to low for the sauce.

-Take a corn tortilla place it in hot oil, flip it once and take it out and place on a double piece of bounty(paper towel).

-Take that hot tortilla off the bounty and place in the sauce just enough to get the sauce on it.

-In a square baking pan (8x8 or bigger depending on how many people are going to eat) spray pam.

-In that square baking pan put the hot/sauced tortilla and put a tablespoon of ground beef and a pinch (generous pinch) of grated cheese, roll closed, repeat for the rest

-When you have put all your enchiladas in the square baking pan, sprinkle a generous amount of grated cheese on top of all the enchiladas, place pan in an oven at 300 degrees until cheese melts, about 15 minutes.

-If you decide to make this fast and you put the enchilada on a serving plate that is microwave safe, put it in the microwave for about 3 minutes.

Tacos:

serves 2 people

6 corn tortillas

2 cups oil

ground beef (80/20)

Seasoning salt

garlic powder

onion powder

lemon juice

Lettuce

tomato

avocado (if desired)

grated cheese(whichever you prefer)

Salsa (can be pace medium, that's what I have with it, it's not that hot)

-Brown ground beef in a preheated over medium heat pan, after having sprinkled seasoning salt, garlic powder, onion powder, and lemon juice to taste. Mashing it against pan to make the size of meat smaller and edible

-Tip pan so that you drain the fat.

-Turn off heat

-Take the 2 cups oil and put in a pan over medium heat, preheat for 5 minutes.

-Take a corn tortilla and place it in the middle of the hot oil with a spatula and wooden spoon

- Place 1 tablespoon of meat in the center of that tortilla and bring one flap of the tortilla towards the other to close it, control the tortilla with the spoon and spatula.

-Brown until desired

-Take tacos as you make them and blot them with bounty

-Garnish with lettuce,tomato,cheese, avocado,and salsa

Enjoy!

I was going to add gorditas, and picadillo but I'm hungry, I will find your question later and add it, ok? mzz

Fideo:

In a large skillet melt 2 tablespoons of butter and cook fideo noodles until they are golden/slightly browned. Add in some water (until it is covering the top of the noodles) and simmer until noodles are tender. Add in some chicken flavoring (about 1/4 tspoon) and add in 1 small can of tomato sauce.

DRINK

Aguas Frescas

These cool drinks are made with water, fruit and a sweetener (typically sugar) and are commonly served in Mexico by street vendors in barrel shaped clear jars called a vitrolero

You will also find them in many Mexican takeout restaurants. Aguas frescas are the drink of choice in most Mexican cantinas.

I N G R E D I E N T S

Fresh fruit such as pineapple, honeydew melon, cantaloupe, strawberries

Granulated white sugar

Water

I N S T R U C T I O N S

To make just take any ripe fruit (common flavors include pineapple, cantaloupe, honeydew, watermelon, strawberry and papaya) blend till smooth, add water to thin to a light consistency and sweeten to taste with sugar. Depending on the fruit you may need to strain the mixture to remove any seeds or small bits, the drinks should be the consistency of water (thus the name).

APPETIZER

Salsa de Chile Pasilla de Michoacan (Michoacan Pasilla Sauce)

This sauce comes from the northern part of Michoacan. It is traditionally served over boiled rice and topped with crumbled cotija cheese, with corundas or uchepos and creme. Recipe by Diana Kennedy.

I N G R E D I E N T S

3 chiles pasilla

2 tablespoons safflower oil

2 small fresh tomatillos, husks removed, rinsed

1/4 cup water

2 garlic cloves

1/4 small white onion, finely chopped

1/4 teaspoon sea salt (or to taste)

I N S T R U C T I O N S

Remove stalks if any from the dried chiles and discard. Wipe the chiles with a damp cloth to remove any dust. Heat the oil in a frying pan and gently fry the chiles, without burning, turning them around from time to time until they are firm to the touch, about 5 minutes.

Remove the chiles with a slotted spoon and drain on paper toweling. In the same oil, fry the tomate verde and garlic until lightly browned and soft inside, about 5 minutes. Put the water into a blender jar add the tomate verde, peeled garlic, and crumbled, fried chiles with their seeds and veins. Blend for a few seconds to a textured puree. Heat the same oil in the pan, add the onion and fry gently until translucent, without browning--about 1 minute. Add the blended ingredients and salt and fry, stirring form time to time and scraping the bottom of the pan, until the sauce has reduced and thickened a little and is well seasons--about 5 minutes.

MAIN DISH

Jalisco-Style Pork Tenderloin (Carne Adobado)

adapted from Sunset Magazine, April 2001 Pork tenderloin is pounded until thin, marinated with a dry rub, then fried quickly in this delicious variation of a traditional Mexican dish.

I N G R E D I E N T S

1 pork tenderloin ( 3/4 to 1 pound)

1 1/2 teaspoons Hungarian paprika

1 1/2 teaspoons Chili powder (pure)

1 tablespoon red wine vinegar

2 teaspoons minced garlic

1/2 teaspoon ground cumin

1/2 teaspoon dried oregano

1/2 teaspoon salt

2 teaspoons olive oil

Lime wedges

I N S T R U C T I O N S

Rinse pork. Trim and discard any fat. Place the pork between sheets of plastic wrap and pound with a flat meat mallet until the meat is about 1/4 inch thick. The "steaks" should now be an even thickness.

Mix all other ingredients except the oil and lime in a medium bowl. Uncover the meat and rub the seasoning evenly over both sides of the meat. Cover the meat again with the plastic and place in the refrigerator for approximately one hour (or more).

Add the oil to a 10 or 12-inch frying pan (just enough to coat the bottom of the pan when you swirl it around) and place over high heat. When the pan is hot, add the meat and cook about 2 minutes on each side. Continue to turn and cook until the pork is no longer pink in the center, about 8 minutes total.

Cut the pork into serving sized pieces and add salt and fresh lime juice to taste.

Servings: 3 - 4 main course servings

DESSERT

Mexican Sopaipillas

This is a delicious puff pastry dessert that is sometimes served drizzled with honey or served as an accompaniment with soups. It is

I N G R E D I E N T S

2 cups all-purpose flour|

1 teaspoon baking powder

1 teaspoon salt

2 tablespoons solid vegetable shortening

3/4 cup warm water

oil for deep frying

Toppings:

Honey, cinnamon, crema or creme fraiche.

1 cup warm water

Makes: 12- 6 inch tortillas

I N S T R U C T I O N S

Sift the dry ingredients into a bowl. Use your fingers and rub in the shortening until the mixture is the size of fine bread crumbs. Gradually add just enough water until the dough begins to form. Wrap the dough in plastic wrap and allow it to rest for one hour.

Work with half of the dough at a time and roll out into a square keeping it as even and thin as possible. If you have not made pastry before this may take some practice. Just have fun with it! Cut the dough into 3" squares. Complete with the 2nd piece of dough.

Heat oil for deep frying to 375 degrees. Add a few pastry squares at a time and use tongs to push the pastry into the oil. Cook until golden brown on both sides, turning once. Remove them from the oil and place on a plate with paper toweling and allow to drain.

To serve, place on a plate and drizzle with honey and sprinkle with cinnamon. Serve creme fraiche or heavy cream on the side.

Fasten bacon in place as necessary with picks.

Arrange the shrimp and scallops on a slotted baking pan, such as a broiler pan, to allow draining while bacon crisps. Bake shrimp and scallops 10 to 14 minutes, until shrimp is pink and curled, scallops are opaque and bacon is crisp. Shrimps may finish before the scallops.

Favorite recipe for cooking on the grill?

เรื่องโดย Apichai Chomsing | 4/09/2552 09:04:00 PM | 0 ความคิดเห็น »

What is your favorite recipe for cooking out on the grill?

Nothing is better than a simple steak. A little worcestershire, season salt, garlic powder, and black pepper.

Adobo:

1 tablespoon lemon pepper

1 tablespoon garlic powder

1 tablespoon onion powder or flakes

1 tablespoon dried oregano

1 tablespoon dried parsley flakes

1 tablespoon achiote powder

1/2 tablespoon ground cumin

1 tablespoon salt

6 boneless skinless chicken breasts

Nonstick cooking spray or oil

Combine all of the ingredients in a small glass jar with an airtight lid and shake to blend. Store in a cool, dry place for up to 2 weeks.

Season chicken with the adobo seasoning. Heat a grill pan to medium heat and spray with nonstick cooking spray or drizzle with oil. Place the chicken on the grill pan and cook for 3 to 5 minutes on each side depending on the size of the breasts.

Chicken Brushetta

1/4 cup KRAFT Sun-Dried Tomato Dressing

4 small boneless skinless chicken breast halves (1 lb.)

2 large red peppers,

chopped 2 cloves

garlic, minced

2 cans (14-1/2 oz. each) pasta-style or Italian-style diced tomatoes,

undrained 1/2 cup water

2 cups instant white rice, uncooked

1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

1 large tomato, chopped 2 Tbsp.

chopped fresh basil

HEAT dressing in large skillet on medium heat. Add chicken, peppers and garlic; cover. Cook 10 min. or until chicken is cooked through (165ºF), turning after 5 min. Remove chicken from skillet; cover to keep warm.

ADD canned tomatoes and water to skillet. Stir in rice; bring to boil. Reduce heat to low; simmer, uncovered, 10 min. Meanwhile, combine cheese, chopped tomatoes and basil.

RETURN chicken to skillet; sprinkle with cheese mixture. Cover. Cook 5 min. or until chicken is heated through and cheese is melted.

We do this at least once a month. Go to Sam's Club. Buy the 10 lb bag of chicken wings. Put them on the grill for about 1 1/2 hours or until cooked through. You need to make sure to turn them about every 20 minutes or so. When they are done, set about 10-15 in different bowls. We have Buffalo Wild Wings sauces that we add to them. Everyone is satisfied with whatever sauce they prefer!!!

Grilled Asparagus (tons of garlic olive oil, salt and pepper)

Shrimp (garlic olive oil, table salt, red pepper flakes)

Corn (peel the husks back but not off, grill indirectly until charred)

MY FAV!

flank steak pinwheels!

slice steak thin then rolled up with spinach and cheese or roasted peppers and cheese - anything you want

Any good finger food recipes?

เรื่องโดย Apichai Chomsing | 4/09/2552 06:03:00 PM | 0 ความคิดเห็น »

We are having what we call a "food day" and I would like to bring in something good but different. Some kind of dip or just regular snack kind of foods. I am just looking for a really good couple of recipes to please the crowd ya know??? Thanks!

Zesty Nachos

1 medium-sized bag tortilla chips

4 ounces cheddar cheese, grated

1 ounce Monterey jack cheese with jalapeno peppers, grated

2 scallions, sliced

Heat the broiler.

Spread the tortilla chips on a baking sheet. Sprinkle the grated

cheeses and the scallions evenly over the top. Broil for 2 to 3

minutes, until the cheese has melted.

Serve immediately, with salsa or guacamole.

Honey Coated Crunchy Chicken Fingers

Ingredients :

1 lb skinless, boneless chicken breasts

1/4 cup honey (slightly warmed)

1/4 cup water

1 cup crushed corn flakes

Instructions :

Preheat oven to 425; Spray baking sheet with vegetable spray

1) Cut chicken breasts crosswise into strips 3/4 inch wide. In small

bowl combine honey and water. In small bowl combine honey and water.

Put corn flakes on a plate.

2) Dip chicken strips in honey mixture then coat with corn flakes

crumbs. Put on prepared baking sheet. Bake for 10 minutes, or until

cooked at center, turning chicken over at halfway point.

Serves 6

Gourmet French Fries

The gourmet's trick to french fries that are crispy on the outside and soft on the inside is double-frying them.

6 large potatoes (Idaho or Russet is a good choice)

Oil for deep frying (Vegetable or Peanut)

Ice water (optional)

# Cut the potatoes into fries about 3/8" thick. (Thin fries soak up too much oil.) You can peel the potatoes, if you like, but it's not necessary.

# Optional: Soak the cut fries in ice water for about 30 minutes. This step removes a lot of the starch, making them less sticky when frying. Pat the soaked fries dry with a paper towel before frying.

# In a frying pan or deep fryer, heat the oil to 325°. Fry small batches of the fries for about 3 minutes; they will be softened but not browned. Remove them from the oil and let them rest, or sweat, on paper towels for at least half an hour, up to 2 hours. (A great make-ahead step.)

# When you're ready, reheat the oil to 375°. Cook the fries a second time until golden brown, 4-6 minutes. Drain again on paper towels, transfer to a serving dish, and season with one of the gourmet seasoning recipes below while they are still warm and moist.

Pepperoni & Cheese bread

Thaw out bread dough; shape into long rectangle; season with italian seasonings and olive oil. Cover with pepperoni and then top with mozzerella cheese and roll. Place in oven on 350 and bake for 30 to 45 minutes.

OK, take deli ham (the square kind, boiled ham) and spread room temp cream cheese on it. Cut into three slices long ways and roll a mini DILL (cocktail) pickle into each one. Cut each of those into disks and stick a toothpick in each so everyone can grab one. Refridge and YUM! Also, you can get bread sticks and get thinly sliced prosciutto and tie it around the ends...looks pretty and tastes great. I have a dip for that if you like...

These are some of the things that I like bringing:

In a crockpot mix all 3 until melted:

1 bag Shredded Cheddar Cheese

2 cans Hormel Chili w/o beans

2 packages cream cheese

Or this:

Chicken Wing Dip

INGREDIENTS

2 (8 ounce) packages cream cheese, softened

3/4 cup pepper sauce, such as Franks® Red Hot®

1 cup Ranch-style salad dressing

2 cups diced cooked chicken

1 cup shredded Cheddar cheese

DIRECTIONS

Preheat the oven to 350 degrees F (175 degrees C).

In a medium bowl, stir together the cream cheese and hot pepper sauce until well blended. Mix in the Ranch dressing, chicken and Cheddar cheese. Spread into a 9x13 inch baking dish.

Bake for 30 minutes in the preheated oven. If oil collects on the top, dab it off using a paper towel. Serve with tortilla chips.

A lot of good tips and advice already listed but I had one to add...If you have a Safeway or Von's nearby they sell a wonderful "Honey Garlic" sauce with the rest of the sauce - should be by the Asian sauces - anyway, its excellent warmed with premade (storebought) frozen meatballs -(you can spray with pam if you want) just throw the bag of meatballs in a crockpot and pour two bottles of the honey garlic sauce over the whole thing, turn on high to get going and then turn down to low...You can plug it in wherever your going and they are always such a hit, the temp control never gets turned off before they are gone, leaving me with nothing but the sauce on the bottom of the crock pot! They have been a crowd pleaser at any gatherings we have been to in the last year or so! These are also good done on the stovetop and served over rice for dinner...Just serve with a nice coleslaw or even a salad.

Party Pinwheels

You don't have to be a bread maker to prepare this welcome alternative to French bread or dinner rolls

1 8 oz package crescent rolls, from the dairy case

2 tsp. sesame seeds

1/2 tsp caraway seeds

1 tsp. poppy seeds

2 tablespoons unsalted butter, melted

Preheat over to 375. Separate crescent rolls into 4 rectangles on a pastry board. Eliminate the diagonal cut on each rectangle by moistening and pressing together the serrated edges.

Mix all seeds together. With basting brush, spread butter on dough, sprinkle seeds evenly over butter. Roll like a jelly roll, moisten seam and seal tightly.

Spray a freezer safe dish with vegetable spray. Place rolls on dish, freeze until firm enough to slice.

Spray cookie sheet with vegetable spray. Cut rolls into 1/2 inch slices. Bake 5 minutes or until lightly browned. Serve immediately or at room temperature.

3 dozen.

Satiny Chocolate Glaze --

"A glossy chocolate glaze to drizzle over a Bundt cake. It's also great on cookies and doughnuts."

INGREDIENTS

3/4 cup semisweet chocolate chips

3 tablespoons butter

1 tablespoon light corn syrup

1/4 teaspoon vanilla extract

DIRECTIONS

In a double boiler over hot, but not boiling water, combine chocolate chips, butter and corn syrup. Stir until chips are melted and mixture is smooth, then add vanilla.

Spread warm glaze over top of cake, letting it drizzle down the sides.

I am making chocolate cream pie, you just buy 2 packets of instant pudding mix, and you need 2% milk, chocolate chips/chocolate candy bar and whipped cream or whipped topping. You make the pudding using less milk than the box says and spread it into a baked pie shell and you can either mix the chocolate cany into the pudding mixture or layer it on top, its so yummmmm! Oh and just spread the whipped cream all over the top!

Thai noodle recipes anyone?

เรื่องโดย Apichai Chomsing | 4/08/2552 08:03:00 PM | 0 ความคิดเห็น »

I just tried Thai food for the first time this month and loved it. I had a shanghai noodle dish in a brown sauce. I'm not quite sure what it was but it was good. Anyone have some similar

Pad Thai is probably the most famous noodle dish from Thailand, but this dish does NOT have a brown sauce.

Sounds like PAD SEE EW (my personal fav!).

Pad see ew unites wide, flat rice noodles, similar to chow fun noodles, with broccoli, egg, bean sprouts and a sweet-smoky “see ew” sauce. With proper pad see ew, broccoli retains some snap. This dish is perfect for newcomers to Thai food, or for people who don’t like alot of spiciness.

Ingredients:

1 bunch of Thai broccoli, stemmed, plucked, and washed (To prepare, remove bottom inch of stems where it tends to get woody. Cut in 2-inch sections, keeping flowers and leaves.)

1 package of rice noodles (You should look for either flat, broad rice noodles or rice noodle sheets. Look for the kind wrapped in plastic, not in sealed plastic bags, since they tend to be fresher.)

2 small chicken breasts or any other meat of your preference

3 eggs

5 cloves garlic, minced

oyster sauce, to taste

soy sauce, to taste

1 tbsp red chili flakes (optional)

METHOD:

If your are using fresh flat rice noodles that are not pre-cut, cut them into strips of 3/4 inch wide. Otherwise cook the noodles according to package directions.

Cut Chinese broccoli into 2 inch long pieces. Halve the stems lengthwise because thick stems take longer to cook. You are going to want to cook them at the same time.

Heat a wok to high heat and then add 2 tbsp of oil. Drop in the chopped garlic and stir. Add the sliced chicken. Stir to cook the chicken. When the chicken is somewhat cooked or turned from pink to light brown, add rice noodles and chili flakes. Stir to break up the noodles. Add the oyster sauce and soy sauce.

Stir to mix the seasonings into the noodles and chcicken. Open a spot in the middle of the pan, and drop the egg in. Scramble the egg until it is almost all cooked (not watery any more). Fold in the noodles and mix them all. Add the Chinese broccoli, stems first. I usually add half of the Chinese broccoli and stir until it wilts and then add the rest. But if you have room in your wok, you can cook all the Chinese broccoli at once. As soon as the Chinese broccoli is cooked, turn off the heat.

Put on a serving plate and sprinkle white pepper on top. Serve with the usual noodles condiments; sugar, fish sauce, vinegar and dried ground pepper. I usually like mine with ground chili peppers and vinegar.

pad thai is probably one of the best thai noodle recipes

Do any of you have some good Liberian or Soul Food recipes?

เรื่องโดย Apichai Chomsing | 4/08/2552 06:02:00 PM | 0 ความคิดเห็น »

I know more of the soul food recipes such as collards, fried chicken, and black-eyed peas. Its for a culture project and I was specifically looking for Liberian desserts or even traditional slavery foods.

Here's a recipe I found when I was planning to travel there.

LIBERIAN RICE CAKE

* 1/2 pound butter

* 1 cup sugar

* 4 eggs, beaten

* 2 cups rice flour (* see below for substitute)

* 2 teaspoons cream of tartar

* 1 teaspoon baking soda

* 1 cup milk

* 1/2 teaspoon nutmeg

* 1 teaspoon vanilla extract

Cream the butter and add the sugar gradually. Beat until light and fluffy. Add the eggs and beat well. Preheat oven to 325°. Sift the rice flour, cream of tartar, and baking soda together. Add to the egg mixture alternately with the milk. Beat constantly. Add the nutmeg and vanilla. Beat well. Pour into a 12-inch buttered loaf pan. Bake in a 325° oven for 35 minutes, or until a cake tester comes out clean.

(*In place of rice flour you can use baby rice-cereal which you can get in any supermarket so there are no hard-to-find ingredients.)

Traditional Libyan Semolina and Date Cake W/Syrup

1¼ hours , 15 min prep , SERVES 8 -10 , 1 cake (Change Servings)

Change to: cake US Metric

Safra is a traditional cake from Libya. It is rich & aromatic with the flavours of cloves, cinnaomn & dates. To finish this delicious cake you drench it in syrup & leave it to soak for around 6 hours... then you can enjoy! Time to make doesn't include the syrup soaking time!

Ingredients

DATE FILLING

3 tablespoons sunflower oil

1 1/2 lbs pitted dates, chopped

1 teaspoon ground cinnamon

1/8 teaspoon ground cloves

CAKE

2 lbs semolina (fine or medium)

1 lb granulated sugar

2 teaspoons baking powder

1 cup sunflower oil

3/4 cup water

blanched almond or whole cloves, for garnish

SYRUP

1 cup sugar

1/2 cup water

1 cup honey

1 lemon, juice of, 2 to 3 tablespoon

Directions

Put the oil and dates in a heavy skillet and cook over low heat, stirring continuously, for about 20 minutes, or until a thick paste has formed.

Remove skillet from the heat and stir in the cinnamon and cloves. Cool the paste. Mix cake ingredients except the almonds or cloves together into a thick batter.

Put half of the batter into a cake tin 12 x 12 in., or 12 x 16 inches Put in the date filling, pressing it into the corners of the tin so that it covers the batter. Pour in the balance of the batter and smooth out the surface.

Lightly score the top of the cake in 2- inches diamond shapes or square pieces. Put 1 blanched almond in the center of each diamond or press 1 whole clove into each piece, with the stem down. (clove is prettier but yor not going to eat it!).

Put the cake tin into the center of the oven so that it bakes evenly, and bake in a 350 degree F. oven for 45 minutes.

Put all syrup ingredients into a pan and simmer over low heat for 10 minutes, stirring frequently. When the cake is removed from the oven, pour the hot syrup over the top and allow it to be absorbed.

Let the cake stand at room temperature for at least 6 hours before eating.

What is the best dessert recipe?

เรื่องโดย Apichai Chomsing | 4/07/2552 11:15:00 PM | 0 ความคิดเห็น »

I am looking to make just a quick yummy dessert that takes less than an hour. Do you have any favorites, and their recipes?

Layer chunks of brownies, chocolate pudding, crushed toffee bars and whipped cream.....if you want, you can buy pre-made brownies from your bakery. Top it off with additional toffee and chocolate bits. It's delicious, rich and looks decadent! Use a trifle or clear bowl so everyone can see your masterpiece.

My favorite dessert is fresh fruit salad.

I use these ingredients and make to the crowd I am feeding.

Bananas, Grapes,

Oranges or Mandarin Oranges

Pineapple, Pears, Peaches,

Fresh Cherries or Marciano Cherries

You can add coconut also if you like.

You can either bake (in a bundt pan)or buy a chocolate cake and slowly melt some chocolate bars or chips, and drizzle it over the top. then melt some peanut butter and drizzle it over the top, too. Make some interesting and pretty designs really easily by using a spoon to do the drizzling. . . it's fun and easy and so pretty!!

Brownie Trifle

1 (19 7/8 ounce) package fudge brownie mix

1/4 cup water

1/2 cup vegetable oil

2 eggs

1 tablespoon dry instant coffee (dry)

1 package chocolate flavor instant pudding and pie filling mix

2 cups milk

1 (6 ounce) package English toffee bits (reserving 2 tablespoons for garnish)

3 1/4 cups whipped cream

Heat oven to 350F degrees.

Prepare brownie mix as directed on package for 13 × 9-inch rectangular pan, using water, oil and eggs and stirring coffee into batter. Bake and cool as directed. Cut brownies into 1-inch squares. Place half of the brownie squares in the bottom of a 3-quart glass bowl. Prepare pudding mix as directed on package for pudding, Pour half of the pudding over brownies in bowl. Top with half each of the toffee bits and whipped cream. Repeat with remaining brownies, pudding, toffee bits and whipped cream. Sprinkle with reserved toffee bits.

Cover and refrigerate at least 4 hours before serving.

Cover and refrigerate any remaining trifle.

I like a batch of turtle brownies or chocolate chip cookies with vanilla ice cream.Or a bannana split.

Here's a quick way to make a chocolate cream pie: buy a ready made graham cracker crust and prepare some instant chocolate pudding. Pour pudding into the crust and top with non-dairy whipped topping, like Cool Whip. Chill or freeze for an hour if you want a firmer pie, then serve. Or eat it as soon as it's prepared. Voila!

This one takes an hour to bake, but it's soooo good and so easy to put together, we make it often for ourselves and for potlucks.

EASY PEACH COBBLER

1 pkg. yellow or white cake mix

1 (28 oz.) can of sliced peaches w/ light syrup

1 stick butter or margarine, cut into 1-inch slices.

Preheat oven to 350 degrees. Spray 9x13-inch metal or glass pan lightly with vegetable oil spray.

Pour one half of dry cake mix into the pan, spread evenly on bottom. Pour entire can of peaches (including syrup) evenly over dry cake mix layer. Pour remaining half of dry cake mix package evenly over fruit layer. Distribute slices of butter evenly over the top of the cake mix.

Bake, uncovered, for 50-60 minutes, or until top is golden brown. Serve warm or cold, with or without vanilla ice cream on top!

Mmmmm. Try it!!!

How can i make graham cracker recipe without cooking?

เรื่องโดย Apichai Chomsing | 4/07/2552 09:04:00 PM | 0 ความคิดเห็น »

I want to make graham dessert without cooking. Can you help me to make graham recipe with mango?

Sure you can!

It's easy as 1 2 3

First crumble enough graham crackers about 2 cups into a mixing bowl add about 1/4 cup of melted margarine or butter. Then add 1/2 teaspoon cinnamon. Mix this very well and pat it into a serving dish or 8 inch square baking pan. This is the base. Save a few cracker crumbs for the top.

Now in the baking isle of your grocery store look for "instant pudding" since you like mango you can use either "cheesecake, vanilla or rice pudding flavors" Follow the directions on the pudding box for the amount of milk to use. . Mix as it instructs and pour into the base of cracker crumbs. Now peel and cut into cubes the mango fruit and layer on top...

Grab a container of cool whip and spread over the fruit then top with more graham cracker crumbs..chill until very cold then serve..... see it was easy....now I'm going to make some too....one last thought some coconut would be nice too if you want to add some additional tastes to it.

Best wishes,

Mama Jazzy Geri

use them as a base. add a spoonful of chocolate pudding and a strawberry on top..maybe whipcream...:)

Pad Thai...here is a recipe that I have used it is delicious!

* 1 (12 ounce) package rice noodles

* 2 tablespoons butter

* 1 pound boneless, skinless chicken breast halves, cut into bite-sized pieces

* 1/4 cup vegetable oil

* 4 eggs

* 1 tablespoon white wine vinegar

* 2 tablespoons fish sauce

* 3 tablespoons white sugar

* 1/8 tablespoon crushed red pepper

* 2 cups bean sprouts

* 1/4 cup crushed peanuts

* 3 green onions, chopped

* 1 lemon, cut into wedges

* 1/4 cup chopped cilantro

DIRECTIONS

1. Soak rice noodles in cold water 30 to 50 minutes, or until soft. Drain, and set aside.

2. Heat butter in a wok or large heavy skillet. Saute chicken until browned. Remove, and set aside. Heat oil in wok over medium-high heat. Crack eggs into hot oil, and cook until firm. Stir in chicken, and cook for 5 minutes. Add softened noodles, and vinegar, fish sauce, sugar and red pepper. Adjust seasonings to taste. Mix while cooking, until noodles are tender. Add bean sprouts, and mix for 3 minutes.

Garnish with crushed peanuts, chopped green onions, wedge of lemon, and cilantro.

Low Carb Quick Chocolate Almond Ice Cream

Recipe courtesy George Stella

.Recipe Summary

I. Prep Time: 15 minutesCook Time: 7 minutes

Inactive Prep Time: 2 hours Yield: 4 servings * Nutrition Info: Low Carb 2 tablespoons sliced almonds 1 cup heavy cream

1/2 cup sugar substitute (recommended: Splenda) 1 teaspoon no sugar added vanilla extract 1/8 teaspoon no sugar added almond extract

1 tablespoon unsweetened cocoa powder

2 tablespoons whole milk ricotta cheese Preheat oven to 350 degrees F.

Spread almonds out on a sheet pan and bake for about 5 to 7 minutes until just golden brown. (Watch them carefully as they can burn easily.) Remove and cool.

With an electric mixer on high, whip the heavy cream in a bowl just until frothy and add in the sugar substitute, extracts, cocoa powder, and ricotta cheese. Continue to whip on high until peaks form. Be careful not to over-whip, or cream will break.

Fold in toasted almonds. Using a 3-ounce ice cream scoop, place 1 scoop each in a champagne glass and freeze as "faux" ice cream or serve refrigerated as a parfait. If desired, garnish with low carb whipped cream, toasted almonds, a strawberry fan, cocoa powder, and a sprig of fresh mint.

I Make the ice cream all the time

i do nt know sorry

celery

I once made this desert - I bought wafer cups, like the ones you use for ice-cream. Whipped up some sugar-free angel delight (or you can use sugar-free yogurt) and topped up with strawberries, sprinkled crushed nuts and a slice of star-fruit. Obviously, has the fructose of the fruit in it so make sure the diabetic can eat fruit (usually not a prob, but I like to be sure). Also, a fruit salad is good if the person can eat fruit. If not - I'm sorry but cheese and water-crackers! (read the ingredients on the box and get sugar-free ones).

JELLO DESSERT

1 pkg large sugar free jello, any flavor

coolwhip

fresh fruit

Make the jello as on the package but use 1/2 cup less water.

Add fresh fruit like fresh strawberries, grapes, chopped apples. Let it gel for 4-6 hours. Mix up the jello and add 1/4 tub of cool whip. Add more if desired. Mix well, and its like an ambrosia.

Put the mix in a glass, and top with more fresh fruit or coolwhip.

Serves 4

Any desert you make will have calories, yummy or not, if it has calories, it is the same as any other desert. A type 1 diabetic can control this with medication so can eat anything. A type 2 must watch what he eats a little more careful. I have been a diabetic 31 years and have been able to ignore desert most times why bother?

What is a good recipe for cooking Goose or duck?

เรื่องโดย Apichai Chomsing | 4/06/2552 09:04:00 PM | 0 ความคิดเห็น »

I'd like to try these delights but I'd like a recipe that doesn't require alot of odd ingredients. Ingredients I'd already have in the kitchen.

Please make sure you give details as to cooking time and degrees. Thanks

go to foodnetwork.com and look up the Barefoot Countessa and search for goose or duck (both are very similar in method). Because both can be extremely greasy/fatty if you just try and cook it like a chicken or turkey, she has a parboil treatment which leeches out excess fat and keeps your waterfowl crispy and not greasy.

Goose or Duck Finger Steaks

1 egg

1 cup milk

1 cup flour

1 teaspoon baking powder

1 teaspoon salt

1 teaspoon garlic powder

2 lbs geese, breasts or duck breasts

Cut goose or duck breast into finger size strips. Set aside.

Combine batter ingredients until smooth.

Add finger steak pieces, stirring to coat with batter.

Marinate in batter 20 minutes to 1 hour.

Deep fat fry a few pieces at a time so that they won't stick together, until browned and floating.

Remove with slotted spoon and drain on paper towel.

Serve with seafood cocktail sauce for dipping.

Serves 6

20-Minute Peking Duck:

Here's a simplified--and delicious--Peking duck with flour tortillas standing in for traditional thin pancakes.

2 teaspoons dark sesame oil

2 (8-ounce) packages boneless duck breast halves, thawed and skinned

1/3 cup hoisin sauce

1/2 teaspoon grated orange rind

2 tablespoons orange juice

2 teaspoons Sriracha (hot chile sauce, such as Huy Fong)

4 (6-inch) flour tortillas

1/2 cucumber, peeled, halved lengthwise, seeded, and cut lengthwise into 8 strips

2 green onion tops, cut into thin strips

2 teaspoons sesame seeds

Heat oil in a large nonstick skillet over medium-high heat. Add duck to pan; cook 2 minutes on each side. Reduce heat to medium; cover and cook an additional 3 minutes on each side or until done. Cut duck diagonally across grain into thin slices.

Combine hoisin, orange rind, orange juice, and Sriracha. Heat tortillas according to package directions. Spread about 2 tablespoons hoisin mixture down center of each tortilla. Top each tortilla with 1/4 of duck, 2 cucumber strips, 1/4 of onions, and 1/2 teaspoon sesame seeds; roll up.

Yield: 4 servings (serving size: 1 filled tortilla)

Anybody good with Thai recipes?

เรื่องโดย Apichai Chomsing | 4/06/2552 08:05:00 PM | 0 ความคิดเห็น »

I'm dying to figure out how to make this Thai dish. I used to order it at a restaurant by my old work but can't find the recipe anywhere.

It was basically chicken with bamboo & basil in a creamy curry sauce served over white rice. The sauce was NOT red, it was like yellow but I think they call it green curry? I keep finding recipes for the red curry sauce & that's not it. Also, where do you get bamboo? And how do you cook it? I've never cooked any type of Thai food before. Thanks!

Oh GOD!!! miss it!!! yummy blassssy!! hot-like-hacked-head!!

Ok. most of thai cuisines consist of herbs and spices that sometimes very hard to find in local market. but since Thai food became popular for some time. so It is easy for you to find those ingredients over the corner.

Well You food, If the color is not red, then the green curry.

The easiest way is to buy an instant Thai curry paste which is available worldwide, even e-bay:where you can buy a star.

Our country people don't eat bamboo but we love bamboo shoots, grrl.

the bamboo shoots are available in preserved or fresh-picked or even dried bamboo shoots,Which often is preserved in very heavy salt.

If you need recipes in details then these are main ingredients that you need for both green or red color curry:red or green small chili, coconut milk, prawn paste, garlic, fish-salt, sugar, small onion, etc like basil leaf, cumin root. these are basic curry ingredients. Bring to blend(except coconut milk)

For curry soup: cook paste with oil(veg) till brownish then put meat(any) keep on cooking then add coconut milk then wait till boil then put veg(any) then wait till boil again then serve.

For rice-topping:cook paste and meat till half-done then add coconut milk for a coffee-cup in high flame and cook till dried then top on rice.

This is a simple method where maintain the test of thai food on your own skill.

Oh no way! I love that sauce! its called green curry I think

My husband and I hit the gym alot but I was REALLY paying attention to the food I make and Im beginning to realize that its not that healthy and I think It might have to do with the fact that its our first year married and I cook good foods but alot of them are "instants" and practically made for you. So, I need help with REAL recipes that are healthier and not too hard to make. Thanks!!!!

Wanted a simple dessert recipe to impress?

เรื่องโดย Apichai Chomsing | 4/05/2552 11:14:00 PM | 0 ความคิดเห็น »

I am having a dinner party and am stuck for dessert recipes. I am after something simple, not to complicated to put together, that preferrably can be made in advance. But I really want something that will impress, something with a bit of 'Wow factor'. Can anyone help?

My secret weapon is trifle. When I take it to work, I don't include the alcohol, though. (we'd probably be happier if I left it in!!!)

Large bowl, preferably footed - or a trifle bowl

Prepare two batches of vanilla pudding

Thaw a big container of whipped topping (not fresh - it needs to have the gelatin in it to keep shape)

Bake or purchase a pound cake and cut into 1/2" slices

Seedless raspberry jam

Godiva liquor or Chambord

Seasonal fruit, washed, peeled, etc.

In a very small pot, warm the raspberry jam and add liquor to taste. (if you want the taste, but not the alcohol, let it simmer very slowly to evaporate the alcohol)

Brush each side of the slices of poundcake and make one layer in the bottom of the bowl.

Add a layer of pudding

Add a layer of fruit

Add a layer of whipped topping

Repeat until the bowl is full. Use remaining fruit to decorate top. Cover with plastic wrap and put in the fridge for a day or two for the flavors to meld.

Looks awesome and tastes even better.

This one is so easy and SO tasty no cooking required

get a large bowl

put a layer of ginger biscuits in soak in whiskey or brandy

cover with a layer of whipped double creme

repeat

repeat again

cool in refrigerator for a least 1 hour

serve

Ok here is one !

It is italian dessert called panacotta. I LOVE IT!!!!!

as it's a video so even not in english, you might easily understand. this site has got english videos but it seems they just started...

rum raisin bread pudding.....served with vanilla ice cream...

soak raisins in your choice of rum...white or dark...don't use a spiced rum...

day old bread........i like challah, or white bread...don't cut the ends...they add texture....

add sugar, raisins (pour off excess alcohol). 3-4 eggs, 2 cans of evaporated milk, cinnamon, nutmeg, dot with butter or margarine..

pour into shallow baking dish and bake for one hour...cover during last 15 minutes....

for ice cream..use good quality vanilla, a pint should due, let soften, in another bowl, mix ice cream, 4 capfuls of rum, or rum extract, a pinch each of cinnamon and nutmeg...mix thoroughly and put back into original container...

re-freeze....

let pudding cool and serve warm in martini glasses...with the ice cream on the side of the glass, topped with a cinnamon stick................

enjoy...

Very simple Avocado dessert:

Ripe Avocados( 1 large will serve 4), a little milk and sugar.

Peal and mash avocado with a fork, add a bit of sugar to taste and a bit of milk to thin it out. Chill in fridge. Serve in small custard cups. It is very satisfying and healthy.

make a chocolate trifle!

you can make a big one or you can make them in clear individual bowls or even martini glasses!

layer the bottoof your bowl with brownies (either store bought gooey brownies or homemade!

then topa a layer of strawberries, other berries or even mangoes. then top with whipped cream. repeat the process until you reach the amount of layer you'd want.

I'm trying to figure out if anyone knows a good recipe for cooking chicken wings in the oven.

Oven-Barbecued Chicken Wings

Ingredients

3 lbs chicken wings

salt

fresh ground pepper

2 cups tangybarbecue sauce

Directions

1. Preheat the oven to 375 degrees.

2. Bend the wings and tuck the tips under the large joint to form a triangle.

3. Season the chicken wings on both sides with salt and pepper.

4. Set them in a single layer in a large roasting or baking pan.

5. Use 2 pans if you have to.

6. Bake the chicken wings, turning once, until browned, about 45 minutes.

7. Remove the wings from the oven and pour off all the fat from the pan.

8. If necessary, blot the wings with paper towels.

9. Return the wings to the pan.

10. Pour the barbecue sauce over the chicken wings and return to the oven.

11. Bake for 10 minutes.

12.Turn the wings over and bake 10 minutes longer.

13. Serve hot, at room temperature, or cold.

If you have a sheet tray, lay a sheet of foil on the tray. If it's an aluminum tray, just use it as is. Pre-heat oven to 450 degrees. (yes your oven need to be piping hot. This will give your wings a nice crispy texture)

Season and toss your wings with spices of your choice. I like to use Salt, Garlic Powder, and Paprika, and melted margarine.

Lay all of your wings flat and apart on a sheet tray and place them into your oven for 20-25 minutes or until your wings are crispy and golden brown.

In the meantime prepare your sauce ahead and place in a bowl and set aside. (Preferably a stainless steel bowl) You can get a great buffalo sauce recipe on the back of hot sauce bottle -"Red Hot" is the brand I prefer.

Remove wings from oven and let cool for about 10 minutes. Toss warm wings in sauce to coat evenly. Serve with celery and bleu cheese - mm mmm good!

what i do is this.. i take the chicken wings and spread them on a lightly greased cookie sheet and bake them for 10 minutes at a 375 degree oven.. turn them half way through. then i put italian dressing on them and bake them for another 10 minutes. and turn them. bake until done. after they are done i put them in a bowl and put my favorite bbq sauce on them cover and shake.. i wait 2 minutes and shake again.. then i serve them.. they are sooooooo good...
