Unbelievable Pecan Pie
lngredients:

11/2 cups almond flour, 1/half stick melted |
butter, for crust\
3 beaten eggs, 1 cup Splenda, 1 tsp. vanilla,!
2 tbls. melted butter, 1 cup STEEL'S SUGAR
FREE COUNTRY SYRUP,1 1/2 cups pecans.
for crust..add almond flour to butter, mix. Press into 8 or 9" pie plate. Ref idgerate. Beat eggs, add Splenda. Beat. Then add ' vanilla, butter and syrup. Mix well, then add pecans. Bake at 350* for about 45 minutes.

1/2 cup sugar substitute (recommended: Splenda) 1 teaspoon no sugar added vanilla extract 1/8 teaspoon no sugar added almond extract
1 tablespoon unsweetened cocoa powder
2 tablespoons whole milk ricotta cheese Preheat oven to 350 degrees F.
Spread almonds out on a sheet pan and bake for about 5 to 7 minutes until just golden brown. (Watch them carefully as they can burn easily.) Remove and cool.
With an electric mixer on high, whip the heavy cream in a bowl just until frothy and add in the sugar substitute, extracts, cocoa powder, and ricotta cheese. Continue to whip on high until peaks form. Be careful not to over-whip, or cream will break.
Fold in toasted almonds. Using a 3-ounce ice cream scoop, place 1 scoop each in a champagne glass and freeze as "faux" ice cream or serve refrigerated as a parfait. If desired, garnish with low carb whipped cream, toasted almonds, a strawberry fan, cocoa powder, and a sprig of fresh mint.

I once made this desert - I bought wafer cups, like the ones you use for ice-cream. Whipped up some sugar-free angel delight (or you can use sugar-free yogurt) and topped up with strawberries, sprinkled crushed nuts and a slice of star-fruit. Obviously, has the fructose of the fruit in it so make sure the diabetic can eat fruit (usually not a prob, but I like to be sure). Also, a fruit salad is good if the person can eat fruit. If not - I'm sorry but cheese and water-crackers! (read the ingredients on the box and get sugar-free ones).
JELLO DESSERT
1 pkg large sugar free jello, any flavor
coolwhip

Make the jello as on the package but use 1/2 cup less water.
Add fresh fruit like fresh strawberries, grapes, chopped apples. Let it gel for 4-6 hours. Mix up the jello and add 1/4 tub of cool whip. Add more if desired. Mix well, and its like an ambrosia.
Put the mix in a glass, and top with more fresh fruit or coolwhip.
Serves 4
Any desert you make will have calories, yummy or not, if it has calories, it is the same as any other desert. A type 1 diabetic can control this with medication so can eat anything. A type 2 must watch what he eats a little more careful. I have been a diabetic 31 years and have been able to ignore desert most times why bother?
