anyone know an easy, fast, delicious food that I can cook tonight for dinner? also i don't want a recipe that has a lot of ingredients.


You can make meatloaf with smashed potatoes and steamed whole/French-style green beans or baby carrots. You can delete or add to this recipe according to your tastes and what you have on hand.

Meatloaf

3 pounds lean ground beef

3 large eggs

1/2 to 3/4 cup Italian style bread crumbs

1 packet Lipton's Onion or Beefy Onion Soup Mix

1 can sliced mushrooms - drained

1/2 cup sliced black olives

2 tablespoons BBQ sauce

1 tablespoon A-1 sauce

1/2 cup salsa

1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand

Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.

CHICKEN FETTUCCINE

1 stick butter

2 lbs boneless, skinless chicken breast

1 cup half and half or cream

1/3 cup Parmesan cheese

1/4 cup green onions, chopped

2 cloves garlic, minced

1 Tbsp. lemon juice

Melt butter in skillet and saute chicken which has been cut into 2 inch chunks. When chicken begins to take on color, add garlic and green onions. Add remaining ingredients except lemon juice cover and simmer over low heat until mixture thickens and chicken is tender. Serve over cooked and drained fettuccine. Sprinkle with lemon juice and additional Parmesan cheese if desired. Serve with baked potato, your favorite vegetable, and tossed salad.

Oven Pork Chops and Veggies-YA

4-6 pork chops

olive oil

thyme

garlic

salt

freshly ground pepper

1 lemon, zested and juiced

2-3 kinds of veggies (such as: potatoes, sweet potatoes, onions, zucchini, squash Roma

tomatoes, parsnips, or pears)

Preheat oven to 425 F. Chop up your veggies into quarters and 2" chunks. Toss them in a bowl and coat lightly with olive oil. Add some thyme, garlic, salt and pepper. Rub thyme, lemon zest and salt and pepper on the chops. Squeeze lemon over the chops. Place the chops in a roasting pan or casserole on top of the veggies. Cook for 30 minutes or until the meat is tender.

PAPRIKA CHICKEN STEW

4 lbs. chicken (8 pieces)

1 tbsp. olive oil

1 tbsp. butter

1 red onion, cubed

1-1/2 tbsp. paprika

28 oz. canned tomatoes (with juice)

2 cloves garlic, blanched and smashed

1 green pepper, cubed

Flour, seasoned with salt & pepper

Pre-heat oven to 350 F. Skin chicken. Dredge with flour. Sear chicken in skillet for 4 min. each side over medium-high heat. Add butter, onion & paprika. Cook for 6-7 minutes. Add tomatoes with juice and garlic. Season and bring to a boil. Transfer to an oven-proof casserole. Cover with foil, bake 30 minutes. Serve with buttered biscuits.

HAMBURGER SPECIAL

1 (8 oz.) pkg. egg noodles

2 lbs. ground beef

1 lg. onion, diced

1 sm. can tomato paste

1/2 c. water (dissolve 1 beef bouillon cube in water)

1 can cream of mushroom soup

1 (3 oz.) pkg. cream cheese, grated

1 c. Cheddar cheese for top of casserole (grated)

1 c. sour cream

Salt and pepper to taste

Cook noodles according to directions on the package. Drain and place in bottom of a casserole dish. Brown beef and onions in a small amount of oil. Drain off excess oil. Add tomato paste and beef bouillon cube dissolved in water to the beef mixture. Add salt and pepper to taste. Spread this mixture over the egg noodles.

Combine mushroom soup, cream cheese (grated) and sour cream in a bowl. Mix thoroughly and spread over the beef mixture. Sprinkle grated Cheddar cheese over the top. Bake at 350 degrees long enough to melt the cheese thoroughly. Container: 13 1/2 x 8 3/4 x 1 3/4 inch.

Try this

3 lbs hamburger

2 cans brown gravy

1 can cream of mushroom soup

make big oval patties place in bake pan season with salt pepper and season salt, bake 15 minutes, remove from oven drain grease. Mix gravy and soup, pour over patties bake another 20 minutes.

Serve with Garlic Butter Potatoes and Corn

Peel 3 potatoes and cut into small pieces, boil until tender drain off water, add 1 stick melted butter and 1 Table spoon minced garlic, salt and pepper

Chicken Stew

2 tablespoons olive oil

2 stalks celery, cut into bite-size pieces

1 carrot, peeled, cut into bite-size pieces

1 small onion, chopped

Salt and freshly ground black pepper

1 (14 1/2-ounce) can chopped tomatoes

1 (14-ounce) can low-salt chicken broth

1/2 cup fresh basil leaves, torn into pieces

1 tablespoon tomato paste

1 bay leaf

1/2 teaspoon dried thyme leaves

2 chicken breast with ribs (about 1 1/2 pounds total)

1 (15-ounce) can organic kidney beans, drained (rinsed if not organic)

Serving suggestion: crusty bread

Heat the oil in a heavy 5 1/2-quart saucepan over medium heat. Add the celery, carrot, and onion. Saute the vegetables until the onion is translucent, about 5 minutes. Season with salt and pepper, to taste. Stir in the tomatoes with their juices, chicken broth, basil, tomato paste, bay leaf, and thyme. Add the chicken breasts; press to submerge.

Bring the cooking liquid to a simmer. Reduce the heat to medium-low and simmer gently uncovered until the chicken is almost cooked through, turning the chicken breasts over and stirring the mixture occasionally, about 25 minutes. Using tongs, transfer the chicken breasts to a work surface and cool for 5 minutes. Discard the bay leaf. Add the kidney beans to the pot and simmer until the liquid has reduced into a stew consistency, about 10 minutes.

Discard the skin and bones from the chicken breasts. Shred or cut the chicken into bite- size pieces. Return the chicken meat to the stew. Bring the stew just to a simmer. Season with salt and pepper, to taste.

Ladle the stew into serving bowls and serve with the bread.

this is a really simple recipe and don't need that much ingredients....

this recipe is called "adobo"

1kg of chicken/pork

1 tablespoon of pepper

2 bayleaves

1/4soy sauce

1/4 vinegar

1 whole or half garlic (minced)

2 tablespoons of olive oil

optional (sugar)

1. add the olive oil saute the garlic

2. add the meat, let it simmer for about 10 mins.....

3. add the vinegar and soy sauce

4. let it simmer for 20 mins....

5.add bayleaves, add 1 tablespoon of sugar(optional)

6. no need to add salt bcoz of the soy sauce

7. mix and let is simmer again until the meat is really tender (try using a fork to know if its tender already)

8. once the meat is tender its done!

the longer it lasts the better it taste!
